Makes 18 cubes
Preparation and cooking time: 40 minutes
Ingredients:
Soy Vinegar Dressing:
1 tablespoon olive oil
2 cloves garlic, minced
1/8 piece medium red onion, chopped
2 pieces siling haba, sliced
1/8 cup red bell pepper, cubed
1/8 cup green bell pepper, cubed
1/8 cup water
1/4 cup cream
1/2 cup mayonnaise
1 tablespoon oyster sauce
1 1/2 tablespoons soy sauce
Pepper to taste
1/4 cup vinegar
1 tablespoon sugar
Tofu:
1/3 cup flour
2 teaspoons tablespoon salt
2 teaspoons tablespoon pepper
1 piece egg, beaten
1/3 cup bread crumbs
3 packs (600 grams each) tofu, sliced into cubes
Cooking oil for frying
Procedure:
Soy Vinegar Dressing:
1. Heat olive oil in a pan over medium. Saute garlic and onion until garlic is golden and onion is translucent.
2. Add the siling haba and bell peppers.
3. Mix in the water, cream, mayonnaise, oyster sauce, and soy sauce.
4. Season with pepper according to your taste.
5. Add the vinegar and sugar. Mix until flavors are well incorporated. Set aside.
Tofu:
1. Prepare the flour, egg, and breadcrumbs in individual containers.
2. Season the flour with the salt and pepper. Mix.
3. Dredge each tofu piece in flour, then the egg, then the breadcrumbs. Do the same for the other pieces.
4. Heat cooking oil in a pot over medium-high heat. Drop the tofu pieces gently and fry until golden brown. Place the pieces on plates lined with paper towels.
5. Serve the fried tofu with the soy vinegar dressing. Top with fried basil leaves.
