DIFFICULTY: Easy

Makes 4 servings
Preparation and cooking time: 50 minutes


INGREDIENTS:

Fried Chicken:
1/2 kilo chicken, cut into bitesized pieces
Salt and pepper to taste
2 tablespoons ginger, chopped
1 1/2 cups cornstarch
1 teaspoon sesame seeds (optional)

Sauce:
2 tablespoons corn syrup
3 tablespoons water
2 tablespoons cooking oil
3 cloves garlic, chopped
2 tablespoons soy sauce
Salt and pepper to taste

PROCEDURE:

Fried Chicken:

  1. In a bowl or plate, season chicken with salt and pepper. Mix in the ginger and leave for 30 minutes.
  2. Cover the chicken in cornstarch.
  3. Heat oil in a deep pan and fry the chicken pieces for 10 minutes or until cooked. Let the fried chicken rest for 20 to 30 minutes in a plate.
  4. Re-fry the chicken at low heat for another 5 to 8 minutes. Set aside.

Sauce:

  1. Mix the corn syrup and water in a bowl. Set aside.
  2. Heat cooking oil in a pan at low heat.
  3. Saute garlic in oil until golden brown. Add soy sauce and the corn syrup-water mixture. Season with salt and pepper. Simmer for a few minutes.
  4. Turn off heat and toss in the fried chicken.

Assembly:

Transfer to a plate and garnish with peanuts and spring onions.
