Makes 5 to 6 patties
Preparation and cooking time: 3 hours and 20 minutes


1 kilogram ground pork
2 tablespoons atsuete oil
2 tablespoons rice wine
2 tablespoons vinegar
1 teaspoon grated lime zest
1 1/2 tablespoons minced garlic
1 tablespoon salt
1 1/2 teaspoon ground black pepper
Cooking oil for frying


1. In a large bowl, mix all the ingredients except the cooking oil. Once well combined, cover with a plastic wrap and place in the refrigerator for 3 hours or overnight.
2. Form thick patties as big as your palm. Place patties on a plate.
3. Heat about a tablespoon of cooking oil in a pan over medium. Place the patties on the pan and cook each side for about 3 minutes each or until brown. Transfer patties on a plate lined with kitchen towel.
4. Serve over rice and egg, on a burger bun, or eat on its own!
