Crusted Baked Fish

Time needed: 50 minutes.

Makes: 4 servings

4 pieces tilapia or cream dory fillets, washed and rinsed well
Salt, to taste
Ground black pepper, to taste
2 teaspoons calamansi or lemon juice, divided

½ cup LADY’S CHOICE Real Mayonnaise
1 teaspoon garlic, minced
¼ block cream cheese
¼ cup mozzarella cheese, grated OPTIONAL
¼ cup Parmesan cheese, grated

½ cup breadcrumbs
½ cup peanuts/cashews, finely chopped
4 tablespoons butter, melted
¼ cup parmesan cheese

Vegetable layer:
1-2 tablespoons olive oil
5 pieces garlic cloves, minced
2 pieces tomatoes, chopped into small chunks
1 piece white onion, chopped
1 bunch kangkong leaves

  1. Make crust

In a bowl, mix together, combine softened cream cheese, minced garlic, parmesan cheese, and LADY’S CHOICE Real Mayonnaise. Mix well until a thick, sticky, crumb paste.

  2. Make the base mixture

Mix breadcrumbs, chopped nuts, melted butter, and parmesan cheese in a bowl. Leave some parmesan cheese for topping.

  3. Make the vegetable layer

Place garlic cloves, onions pieces, and chopped tomato a pan with oil. Sauté for a few minutes until fragrant then season with salt and pepper. Add kangkong leaves and sauté until wilted. Adjust taste with salt and pepper if needed. Set aside.

  4. Prepare the fish

Pat dry tilapia or cream dory fillets well. Season each side with salt and pepper. Drizzle about ½ teaspoon of calamansi or lemon juice onto each fillet.

  5. Assemble the base

Place ¾ of the base mixture onto the bottom of the baking dish, saving the rest as a topping. Place the seasoned fillets into baking dish and on top of the base mixture followed by the vegetable layer on top.

  6. Place crust on top

Spread a layer of the crust on top of each stuffed fillet. Sprinkle the remaining base mixture on top.

  7. More cheese

Add grated mozzarella cheese and parmesan cheese on top.

  8. Bake

Bake at 190 degrees Celsius for about 20 – 25 minutes.
