Creamy Salted Egg Macaroni Salad

DIFFICULTY: Easy

Makes 10 to 15 servings
Preparation and cooking time: 20 minutes


Ingredients:

Salted Egg Sauce:
1½ cups butter
1½ to 2 cups mashed salted egg yolks
3 tablespoons sugar
4½ cups LADY’S CHOICE MAYONNAISE
5 teaspoons Calamansi juice

Assembly:
6 cups elbow macaroni noodles, cooked
1½ cups finely diced tomatoes
1 cup finely diced red onion
2 cup chopped salted eggs
2 cups chopped lettuce
2½ cups shredded roast chicken

Procedure:

Salted Egg Sauce:
1. Melt butter in a pan over medium heat.
2. Mix in mashed salted egg yolks until well combined into a sauce. Remove from heat.
3. Add LADY’S CHOICE MAYONNAISE and calamansi juice. Mix until well combined. Set aside in a bowl.

Assembly:
1. Cook noodles in salted water as stated in package instructions. Drain noodles and set aside to cool.
2. In a large bowl, mix together cooked macaroni noodles, tomatoes, onions, salted eggs, lettuce, and roast chicken until everything are evenly distributed.
3. Add salted egg mayonnaise and mix until well combined. Serve cold.
