Choco Yema Fudge


Makes 36 pieces
Preparation and Cooking time: 6 hours including refrigeration time


1 can Alaska Sweetened Condensed Filled Milk
3 ⅓ cups chopped milk chocolate
¼ cup butter
1 teaspoon vanilla extract
½ teaspoon salt

Yema layer:
16 pieces egg yolks
1 can Alaska Sweetened Condensed Filled Milk
¼ cup butter
1 Teaspoon vanilla extract


1. Place a bowl over a pot of simmering water. Combine chocolate, Alaska Sweetened Condensed Filled Milk, and butter in the bowl and allow to melt together without mixing.
2. Add the vanilla and the salt and mix until just combined, making sure not to over mix.
3. Place this mixture in a tray lined with baking paper and spread out evenly throughout the tray. Cover with plastic wrap and leave to set in the refrigerator.

1. In a bowl over a pot of simmering water, whisk egg yolks until slightly thick. Mix in Alaska Sweetened Condensed Filled Milk until well combined. Add butter and vanilla extract. Continuously mix it until thick and creamy. Allow to cool.
2. Spread mixture evenly over the chocolate fudge mixture.
3. Cover tray with plastic wrap and return to refrigerator to set for a few hours, best overnight.
