Makes: 1 – 2 Servings
2 cans ARGENTINA Corned Chicken
3 tablespoons vegetable oil
1 piece potato, chopped
1 piece carrot, chopped
4 pieces garlic clove, minced
1 piece small onion, chopped
1 piece small red bell pepper, chopped
1 piece small green bell pepper, chopped
1 piece bay leaf
1 cup rice
½ cup tomato paste
1¼ cups water
¼ teaspoon freshly ground pepper
1 tablespoon brown sugar
Salt, to taste
Ground black pepper, to taste
In a pot/rice cooker, fry the potatoes and carrots in oil for a few minutes until a crust forms.
Add garlic, onion, bell peppers, and bay leaf. Saute for a few more minutes.
Add tomato paste and toast for a few minutes. add ARGENTINA Corned Chicken to the pot and cook for a few minutes.
Add rice, sugar, and water. season with salt and pepper. Mix well.
Boil rice until cooked.
