Makes 2-3 servings
Preparation and cooking time: 40 minutes


Cheese sauce:
2 tablespoons butter
2 tablespoons garlic, grated
1 cup cream
1 cup cheese, grated
1 cup mozzarella, grated
1 tablespoon mustard
Salt, to taste
Ground pepper, to taste

2 tablespoons oil
2 tablespoons garlic, minced
1 cup red bell pepper, chopped
½ cup spring onions, chopped diagonally
1 ½ cup leftover bopis (click here for full recipe)
2 cups rice, cooked
Salt, to taste
Ground black pepper, to taste

Egg, sunny side up


Cheese Sauce:
1. In a pan, melt butter and saute garlic for a few minutes. Add cream and melt cheeses. Mix in mustard and season with salt and pepper to taste. Set aside and keep warm.

1. In a pan, saute garlic, bell peppers, and spring onions in oil for a few minutes. Add bopis.
2. Mix in rice and cook for a few minutes. Season if necessary.
3. Mound rice and top with egg. Pour cheese sauce around rice.
