Bulgogi Burgers

Time needed: 45 minutes.

Makes: 4 – 6 servings

Burger Buns
Korean Lettuce

Kimchi mayo:
1/3 cup kimchi, finely chopped
½ cup mayonnaise

1½ kilo ground beef
½ cup white onion, grated
6 pieces garlic cloves, grated
1 tablespoon ginger, grated
1 piece green onion, minced
1 piece medium carrot, minced
2 tablespoon soy sauce
2 tablespoon brown sugar
Ground black pepper, to taste
2 tablespoons sesame oil

Apple Coleslaw:
½ cup mayonnaise
2 tablespoons gochujang
1 tablespoon sugar
2 tablespoons vinegar
2 pieces large apples, cut into thin matchsticks
3 cups cabbage, shredded
Sesame seeds
Salt, to taste


  1. Make coleslaw

    In a bowl combine the mayo, sugar, gochujang, salt, and vinegar. Mix until well combined. Add the apple slices, cabbage, and sesame seeds. Toss until everything is coated and evenly distributed. Set aside to chill.

  2. Make bulgogi patty

    In a bowl, combine all patty ingredients and mix well. Leave to marinate for about 15 – 20 minutes.

  3. Form patty

    Form the bulgogi mixture into medium-sized patties.

  4. Cook patty

    Fry or grill on medium heat for about 10 minutes on each side.

  5. Prepare bread

    Toast buns in a pan over medium heat until crisp.

  6. Make kimchi mayonnaise

    In a bowl, mix the chopped kimchi into the mayonnaise including the liquid until fully combined.

  7. Assemble

    Take the toasted buns and place a layer of kimchi mayo on each side. Place a lettuce leaf on top of the mayo, followed by the bulgogi patty, then the apple coleslaw. Top with the top bun. Repeat for remaining burgers.
