1. Boil potatoes. Drain.
2. In a bowl, mash the potatoes with butter and eggs. Mix in flour and season with salt and pepper. Take a small portion and flatten.
3. Take a bit of bopis and a cube of cheese and place in the middle of the flattened potato mixture. Form into a ball.
4. Roll potato balls in flour, egg and breadcrumbs.
5. Fry for a few minutes, until golden. Turn constantly.
