Makes 4 to 6 servings
Preparation and cooking time: 30 minutes


Calamari Rings:
1/2 cup flour
1/4 teaspoon smoked paprika
1/2 teaspoon baking soda
1/2 teaspoon sea salt
4 teaspoons squid ink
1/2 cup water, chilled
1/3 cup breadcrumbs
4 medium sized squid, washed, peeled, and sliced into rings
Cooking oil for deep frying

Lemon Garlic Mayo Sauce:
1/2 cup mayonnaise
2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon pepper
2 tablespoons lemon juice


Calamari Rings:
1. Sift flour, smoked paprika, and baking soda into a bowl. Add salt.
2. In another bowl, add chilled water to squid ink. Mix in flour mixture to make thick batter. Add breadcrumbs.
3. Dip calamari rings into batter.
4. Carefully drop breaded calamari rings in hot oil. Once floating in oil, transfer calamari rings in a plate with paper towels to remove excess oil.

Lemon Garlic Mayo Sauce:
1. In a small bowl, mix mayonnaise, garlic, lemon juice, salt, and pepper.
2. Cover until ready to serve with the calamari rings.
