Bibingka Pudding Cake

Time needed: 5 hours.

Makes: 6 – 8 servings

1/2 cup cornstarch
1/2 cup sugar
1/3 cup glutinous rice flour
1 tablespoon jelly powder/gulaman powder/gelatin powder
2 cups coconut cream
1 cup cream
1/4 cup butter, melted
1/3 cup white chocolate (OPTIONAL)

1 cup coconut cream
¼ cup sugar
¼ cup cheese
¼ cup salted egg yolks, mashed
¼ cup shredded cheese for topping


  1. Make batter

    In a bowl, combine cornstarch, sugar, glutinous rice flour, jelly powder/gulaman powder/gelatin powder, coconut cream, cream, and melted butter. whisk until a smooth, heavy batter without lumps forms.

  2. Strain

     Strain mixture into a pan.

  3. Cook

    Cook over medium heat, stirring continuously until it starts to thicken.

  4. Chill until firm

    Place in rectangle mold. Refrigerate for 4 hours.

  5. Make sauce

    In a pan, combine coconut cream, cheese, and salted egg yolks over medium heat until smooth and well combined. Add sugar and reduce to a thin syrupy consistency. Set aside.
