It’s that time of year; The calendar has officially landed on the months ending in “ber”, the cold winds are a-blowing, Jose Marie Chan has started singing. ‘Tis the season for Christmas food fare and that brings with it the excitement, expectation, and cravings for the season’s flavors. One of those flavors and smells we all really look forward to – whether in malls or along the streets on simbang gabi, is the bibingka.

Ted’s Kitchen Laguna – Bibingka Cheesecake

Dulce Bakery by Mel – The Ultimate Pamaskong Cake

If there would be a single sentence to best describe this dessert, it would be “Christmas in a bite”. Truly living up to its name, the ultimate pamaskong cake combines the signature flavors of Puto Bumbong and Bibingka in one cake. Layers of Bibingka Chiffon Cake, Creamy Leche Flan, Ube Chiffon Cake followed by a layer of Latik, Muscovado, and Pure Macapuno from Jardin ni Nanay.
