DIFFICULTY: Moderate

Makes 5 to 6 servings
Preparation and cooking time: 1 hour


Ingredients:

Beef Broth:
10 cups water
1 onion, peeled & quartered
4 cloves garlic, crushed
1 teaspoon peppercorns
2 bay leaves
1 tablespoon salt
1 tablespoon green onion, chopped
1 kilogram beef brisket

Sauce:
2 tablespoons cooking oil
1 red onion, minced
2 cloves garlic crushed
2 tablespoons ginger, minced
¼ cup soy sauce
1 teaspoon ground black pepper
¼ cup sugar
1 piece beef broth cube
2 pieces star anise
2 tablespoons green onions, finely chopped
Garlic chips for garnish

Garlic Rice:
4 cups of rice
2 tablespoons oil
2 tablespoons garlic, minced
1 tablespoon spring onion, chopped
Garlic chips for garnish
Salt & pepper to taste

Procedure:

  1. Pour the water in your pressure cooker and bring to a boil.
  2. Put-in all the beef broth ingredients and cook until the meat is tender (about 30 minutes)
  3. Slice the boiled meat in cubes and set aside beef broth.
  4. Heat up oil over medium heat. Saute the onion, garlic, and ginger.
  5. Add the beef and saute. Mix in soy sauce, 1 cup of beef stock, star anise, and beef cube. Stir and then bring to a boil.
  6. Add the sugar and stir.
  7. Season with salt and ground black pepper. Stir and then simmer until the sauce thickens.
  8. Garnish with scallions and garlic chips on top.
  9. Cook garlic rice: Heat up oil and saute garlic. Mix in rice. Season with salt and pepper. Turn off heat and mix in spring onions. Garnish with more garlic chips.
