Banana Leche Flan

Time needed: 1 hour and 30 minutes.

Makes: 2 loaf pans

Banana bread:
1½ cups flour
1 cup packed brown sugar
½ teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
130g butter, diced
2 pieces large eggs
1½ cups overripe bananas, mashed (the ripper the better)
1 teaspoon vanilla extract

Leche flan:
10 pieces egg yolks
340ml evaporated milk
285ml sweetened condensed milk
1 teaspoon vanilla extract
1 teaspoon lemon zest
10 tablespoons granulated sugar


  1. Prepare dry ingredients

    In a bowl, mix together the flour, baking powder, baking soda, kosher salt, and cinnamon until well combined.

  2. Mix wet ingredients

    In a separate bowl, cream the brown sugar and butter together until creamy. Add the eggs and mix well.

  3. Prepare the bananas

    mash the ripe bananas well and add to the brown sugar mixture. mix well.

  4. Make banana bread

    Fold the flour mixture into the brown sugar and mix well. Add the vanilla extract and mix until well combined. set aside

  5. Make caramel for flan

    Caramelize the sugar in the loaf pan, cool slightly, and set aside.

  6. Make flan

    In a bowl beat the egg yolks, making sure there are no bubbles and the batter is lump-free. Add condensed milk and evaporated milk, vanilla extra, and lemon zest then mix well.

  7. Assemble

    In a loaf pan, coat the bottom with a layer of caramel and allow to set. Strain the leche flan mixture into the pan, filling up half full.

  8. Add banana bread batter

    Slowly add the banana bread batter to the top of the leche flan mixture.

  9. Bake

    Place pan in a larger shallow pan filled halfway with hot water as a Bain Marie. Place the entire thing in the oven and bake at 160°C for about 45 minutes,. Take out when stick/toothpick comes out clean.
