Arroz a la Cubana Lumpia

DIFFICULTY: Easy

Makes 6-8 servings
Preparation and cooking time: 1 hour


Ingredients:

5 tablespoons cooking oil
5 pieces saba bananas, sliced
4 pieces eggs
¼ cup garlic, minced
½ cup white onion, minced
½ cup red bell pepper
1 cup potatoes, diced
½ cup carrots, diced
½ cup peas
½ kilo ground beef
½ kilo ground pork
¼ cup soy sauce
1 tablespoon pepper
1 pack lumpia wrappers

Procedure:

1. In a pan over medium-high heat, fry the banana slices. Remove from pan.
2. In the same pan, fry the eggs. Remove from pan.
3. Sauté garlic, onions, red bell pepper, potatoes, carrots and peas in pan for a few minutes.
4. Increase heat to high and add ground beef and pork and continue cooking. Add soy sauce and pepper. Continue cooking for a few more minutes, until almost dry.
5. Place meat and banana slices on a lumpia wrapper. Roll and seal, repeat with other wrappers.
6. Fry until golden. Serve with egg and rice and enjoy!
