Coating





Make the soy stock
1

In a wok pour in water then add sugar, bay leaf, star anise, rice wine, soy sauce, and oyster sauce. Mix then let it come to a gentle boil.

Bring in chicken

Gently place the whole chicken into the wok. Cover and let it simmer for at least 30 minutes. Carefully ladle the liquid all over the chicken every ten minutes. Midway into the cooking, flip the chicken then bathe it again with the liquid. When done remove from the wok and let it cool.

Transfer chicken to a tray. Brush the chicken with honey and season it with ground black pepper, salt, and five-spice powder. Brush it again with honey until the whole chicken is fully coated.

Air dry

Make the chicken sit on an empty bottle in an upright position. Let it air dry for an hour.

Heat cooking oil in a wok. When the oil is smoking carefully fry the chicken until it's completely fried all over. When done transfer to a grill so the excess oil will drip off. Serve with spring onions and kropek.
