3-Way Caramel Bars

DIFFICULTY: Easy

Makes 12 to 16 pieces per type
Preparation and cooking time: 45 minutes


Ingredients:

CASHEW CARAMEL BARS:

Cake base:
¾ cup flour, sifted
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup butter
⅓ cup sugar
½ cup brown sugar
3 pieces eggs
1 teaspoon vanilla extract
½ cup salted cashew, chopped

Topping:
½ cup salted cashew, chopped
¼ cup brown sugar
2 tablespoon butter, melted
1½ tablespoon heavy cream

PILI CARAMEL BARS:

Cake base:
¾ cup flour, sifted
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup butter
⅓ cup sugar
½ cup brown sugar
3 pieces eggs
1 teaspoon vanilla extract
½ cup pili nuts, chopped

Topping:
½ cup salted pili, chopped
¼ cup brown sugar
2 tablespoon butter, melted
1½ tablespoon heavy cream

MANGO CARAMEL BARS:

Cake base:
¾ cup flour, sifted
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 cup butter
⅓ cup sugar
½ cup brown sugar
3 pieces eggs
1 teaspoon vanilla extract
½ cup dried mango, chopped

Topping:
½ cup dried, chopped
¼ cup brown sugar
2 tablespoon butter, melted
1½ tablespoon heavy cream

Procedure:

CASHEW CARAMEL BARS:

Cake base:
1. In a bowl, mix flour, baking soda, baking powder, and salt. Set aside.
2. In another bowl, cream and mix the butter, white sugar, brown sugar, eggs, and vanilla extract.
3. Fold in the dry ingredients. Then fold in the chopped cashews.
4. Place in a lined baking tray and bake in a preheated oven at 325 F. Bake until the the top has browned and a toothpick comes out clean when inserted in the middle of the batter. Let it cool.

Topping:
1. In a pot, mix all ingredients until thick.
2. Spread on top of the baked cake. Once cool and stable, slice into serving portions.

Cake base:

3. Fold in the dry ingredients. Then fold in the chopped pili.
4. Place in a lined baking tray and bake in a preheated oven at 325 F. Bake until the the top has browned and a toothpick comes out clean when inserted in the middle of the batter. Let it cool.

Topping:
1. In a pot, mix all ingredients until thick.
2. Spread on top of the baked cake. Once cool and stable, slice into serving portions.
