White Chocolate Champorado

White Chocolate Champorado

DIFFICULTY: Easy

Makes 4 to 6 servings
Preparation and cooking time: 1 hour


Ingredients:

Champorado:
1 cup chopped white chocolate
1/3 cup milk
4 cups water
1 cup glutinous rice, soaked in 1/2 cup water for 30 minutes
1/4 cup white sugar

Sauce:
1 tablespoon water
1/8 cup chopped dark chocolate
1/4 cup condensed milk

Garnish:
Fried dilis

Procedure:

Champorado:
1. Place chopped white chocolate and milk on a microwave safe container. Set microwave heat to 50%. Heat for 30 seconds. Remove from microwave and stir. Keep heating and stirring every 30 seconds until small pieces are left. Stir these outside of the microwave until completely dissolved.
2. Combine glutinous rice and water in a pot over medium heat and bring to a simmer.
3. Pour in the white chocolate. Stir often until mixture thickens.
4. Add sugar, mix, and set aside.

Sauce:
1. Combine water and dark chocolate in a microwave safe container. Set microwave heat to 50%. Heat for 15 seconds. Remove from microwave and stir. Keep heating and stirring every 15 seconds until small pieces are left. Stir this outside of the microwave until completely dissolved.
2. Mix the chocolate into the condensed milk.

Assembly:
1. Drizzle chocolate condensada on top of the champorado. Top with fried dilis.
